Raw Vegan Broccoli salad with dried raisins and goji berries for a healthy looking skin!

Are you in love with broccoli? Well, I am 😉 ! Especially now that thanks to this delicious raw vegan broccoli salad I’ve discovered that I can eat it either cooked or raw!

This tasty vegetable is rich in dozens of nutrients, like vitamin C, vitamin A (mostly as beta-carotene), folic acid, calcium, and in dietary fiber, minerals, vitamins, anti-oxidants and phyto- chemicals and has so many health benefits for us among which:  cancer prevention, cholesterol reduction, a less acidic body, aid in digestion, prevention of constipation, maintaining a low blood sugar, promoting bone and heart health and so many other health benefits. Just to give a short example, already a good amount of years ago, the Johns Hopkins University published a cancer study showing that broccoli prevented the development of tumors by 60 percent and helped reduce the size of the tumor by 75 percent.

I strongly believe that eating healthy foods can help me & you fight acne, minimize wrinkles and get back to a glowing, healthy, and radiant skin. That’s why I’m trying day by day to find a balance in my diet and to eat as much raw foods as possible.

Well, the day I discovered that I like raw broccoli as much as cooked broccoli, was a happy day :D. Take a look at the below video-tutorial to get the recipe; I bet you’ll feel inspired right away to try it yourself too 😉

It is so easy to make and it’s so healthy thanks to the dressing too, which is a healthy nuts based dressing.

Remember to always soak the nuts and the seeds before eating them or using them in your recipes. Every time I use them in one of my recipes (as in the homemade almond milk recipe), I can’t emphasize enough how important it is soaking them prior to eating. Why? Enzyme inhibitors contained in the nuts & seeds force the body to work over time to produce the enzymes necessary for digestion. Moreover, by soaking them you’ll obtain a greater absorption of the food’s nutrients by the body and an increased digestibility.

You may soak the nuts and seeds anywhere from 20 minutes to an overnight in the refrigerator. Remember that the harder a nut is, the longer it will need to soak.

Are you still undecided whether to give it a try or not? Well, you shouldn’t 😀 Not if you wish to naturally get rid of that tired looking skin and enhance your skin’s natural beauty. All the antioxidants and the sulforaphane contained in broccoli will aid in collagen production and will keep your skin healthy and supple.

Raw Vegan Broccoli Salad This salad is crunchy, sweet and so tasty, yet so full of healthy ingredients like nuts, dried raisins, goji berries, olive oil, dates, ecc..so you’re not only enjoying the health benefits you get from broccoli but also all the nutrients that all these other ingredients bring to our salad. I am more than satisfied with the result and hope you will be too.
