How to Use Almond Pulp Leftover: Homemade Raw Vegan Cheese

If you love making your own homemade almond milk, you are certainly among those persons who had to look for an answer to the question “how am I going to use the almonds pulp leftover?”. Well, this homemade raw vegan cheese may be one solution 😉

In my video tutorial on how to prepare almond milk at home, I suggested you to use the almond pulp leftover to do a facial scrub. But it’s a pity, especially if you’re making almond milk weekly not to find an edible solution on how to use the almond pulp.

That’s how I got to try this yummy, simple, homemade vegan raw almond cream cheese. Click on the video below to see the video tutorial and the recipe :

There are a couple of different ways to make nut cheeses. Today’s recipe, as you could see from the video-tutorial above, is pretty basic.

But you are free to experiment to perfect your own version of almond cheese.

You can play with this recipe adding any combination of  fresh or dried herbs and spices that you like or have on hand.

You may replace the mint with basil and make basil lemon pepper cheese. Or you may cut out the onion and add a clove of garlic.

As I have anticipated you in my tutorial,  the options are endless. Play with the possibilities – there are endless combinations to get tasty yummy results!


Remember you can use any of your favorite nuts: macadamias, cashews, walnuts, brazil nuts..all make smooth, creamy cheeses with a soft texture.

You may choose to peel the almonds before making the almond milk and you’ll get a milk white like cheese, otherwise the result will be very much like in the next photo.

You are probably wondering how does it taste like this vegan raw cheese. Well, the flavor is slightly sweet with a lemony tang and it is less dense than real cheese. The texture is smooth and spreadable.

    Can I use coconut flour (mixed with water) instead of the nut you used??? I have allergies: (I can use this “cheese” on top of pizza??? And / or cheesecake???

    Hi Andrea..you may give it a try and see what it comes out.. I haven’t tried it out therefore I’m not sure of the result you’ll get. You may try it with any other nut..(if there is one you’re not allergic at)..this vegan cheese may do well for a cheesecake..I doubt it will do for a pizza…you may also add some yeast, to get it have a more similar taste to conventional cheese 🙂
